Cookie Recipes!

These are the cookies I’ve been making for my sons fundraiser, and to be honest this was the first time making cookies from a recipe (I prefer to bake pecan pies lol)…but these cookies received such good reviews, I figured it was only right to share them….Enjoy!!
Gluten free chocolate chip cookies:
*these weren’t part of the list, but my cousin asked me to make them for his wife, and they were a big hit in my family, so we added them to the order form. *I took this off the Bob’s Red Mill site, so the links should work. I used Bob’s Red Mill 1 to 1 baking Flour
  • 2-1/4 cups Gluten Free 1-to-1 Baking Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 cup Butter softened
  • 3/4 cup Sugar
  • 3/4 cup Brown Sugar packed
  • 1 tsp Vanilla Extract
  • 2 Eggs
  • 2 cups Chocolate Chips
  • 1 cup Chopped Walnuts (optional)
  • Instructions
    1. Preheat oven to 375° F. Line two baking sheets with parchment paper.
    2. Mix flour, baking soda and salt in small bowl. Set aside.
    3. Beat butter, sugar, brown sugar and vanilla extract in large bowl until just creamy. Add eggs, one at a time, beating well after each addition, scraping down the sides of the bowl as needed. Gradually add flour mixture and beat until well-blended. Stir in chocolate chips and nuts.
    4. Scoop or roll dough into balls, about two tablespoons each. Place 2 inches apart on prepared baking sheets. Let rest, preferable chilled, for 30 minutes.
    5. Bake for 11 to 13 minutes or until golden brown. Cool on baking sheets for 5 minutes. Move to wire rack to cool completely.
    Best Chocolate Chip Cookies
    • 1 cup butter, softened
    • 1 cup white sugar
    • 1 cup packed brown sugar
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 2 teaspoons hot water
    • 1/2 teaspoon salt
    • 2 cups semisweet chocolate chips
    • 1 cup chopped walnuts
    1. Preheat oven to 350 degrees F (175 degrees C).
    2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
    3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
    Peanut Butter Cookies
    1 cup of sugar, 1/4 c additional to roll cookies in
    1 egg
    1 1/4 cup of smooth peanut butter
    1 tsp vanilla
    1/2 tsp salt
    1/2 tsp baking soda
    1 1/4 cup flour
    Preheat oven to 375 degrees, grease baking sheet. In large bowl, cream together butter and sugar, beat in egg to mixture. mix in the peanut butter and vanilla until creamy, stir in salt, baking soda and flour. Roll dough into 1 in.balls and then roll in sugar place on baking sheet and flatten with fork. Bake for 12-15 minutes.
    **After the first round of cookies I put in the oven, I discovered if you let the batch sit in the fridge for a few minutes, the dough is easier to handle. I also used parchment paper with all the cookie recipes.
