Tasty Tuesday!

Taco Tuesday in our house, isn’t always tacos, it’s our day for Mexican dishes.. Today I’ll give our take on chili, in different ways, especially since the weather is getting colder, who doesn’t like warm comfort food?

Chicken Chili (my fave)

1 package McCormick white chicken chili season mix

1 pound chicken breasts, cut in ½ in cubes

1 can white corn

3 cans white northern beans

1 tbsp oil

2 cups of water

Directions:

  • Heat oil in skillet, cook chicken until no longer pink
  • Stir in season mix, water, beans, and corn..simmer for 25 minutes
  • Top with your favorite garnishments, I use Monterey jack cheese and sour cream

 

**These directions differ from the seasoning mix package, but still comes out full of flavor**

 

Turkey Chili

1 pound ground turkey (I prefer 85/15) *can use regular ground hamburger

2 cans stew tomatoes (or 2 cups crushed fresh tomatoes)

2 cans of dark red kidney beans

1 can Chili beans

1 can of light red kidney beans

1 onion chopped

1 green pepper chopped

2 jalapenos seeded and diced (optional)

1 chili mix (hot or mild)

 

  • Brown turkey meat with onion and green pepper
  • Add all ingredients and simmer for at least an hour
  • Top with favorite ingredients and enjoy

 

Husband’s famous Chili

2 pound of stewing beef (can use any beef or steak that will tenderize)

3 cans stew tomatoes (or 2 cups crushed fresh tomatoes)

3 cans of dark red kidney beans

2 can Chili beans

2 can of light red kidney beans

1 lrg onion chopped

1 lrg green pepper chopped

3 jalapenos seeded and diced (optional)

  • ½ packages chili mix (hot or mild)

 

1     Brown stewing beef with onion and green pepper

  • Add all ingredients and simmer for 2 hours until beef is completely tender
  • Top with favorite ingredients and enjo
